The idea for these cupcakes visited me in a dream. A real, honest-to-god, its-three-in-the-morning-and-I'm-under-the-covers dream. When I groggily woke up the next morning, I sweetly remembered dreams filled with chocolate cake and green avocados. As consciousness slowly regained, I remembered I had made an apple cake the night before, so I threw the idea of the avocado cake to the wayside as the prospect of a sugar-laden, pretend-healthy cake breakfast whispered to me from the kitchen. But the more I thought about it, the more delicious a chocolate avocado cake sounded. So delicious, in fact, that I couldn't think clearly the rest of the day.

My curiosity was piqued. After work, I immediately ran to the supermarket and rummaged around for the ripest avocados I could find. It took me 15 minutes and several hundred fruit handling assaults to find the ripest avocados. I was a mad woman with a mission. After all, these cupcakes had come to me in my dreams, clearly it was destiny!

By themselves, these vegan chocolate avocado cupcakes are a perfect representation of a delicious, moist cupcake with the perfect crumb. But with the avocado buttercream? Game changer. This combination is absolutely lethal. The avocado taste in the buttercream is subtle, yet present, and has such a fantastic natural coloring. I would seriously take this avocado buttercream over the traditional buttercream any day. Any day. It is that good.

I shared these cupcakes with my fellow grad students and they were unanimously a hit. I need to dream about pastries more often.

Bittersweet Chocolate Pear Cake

Bittersweet Chocolate Pear Cake

bittersweet chocolate pear cake

I made this cake a year ago to share with my dear friends Tom, William, and Meghan who were returning from an expedition to the Grand Tetons. My intentions were sound as I assembled the ingredients and baked the cake. However, once I tasted it, all good intentions were thrown out of the window.

I ate a fourth of the cake when it was mere minutes out of the oven. For breakfast the next morning, I ate the rest. I just wanted a taste, you see. A sliver. A tiny little bite to satisfy my taste buds. And then, well, things just got out of hand. My fork began moving of its own volition. Really. You must believe me.

this cake is hard to share

It is safe to say that my returning friends received exactly none of the cake I had boasted to them about. I could have made up a story about how it didn't turn out, or how I had "accidentally" dropped it on the floor, but I didn't have the heart to lie to them about a cake so dangerously good. And this cake is good. The pears keep the cake so deliciously moist and the chocolate adds a nice contrast to the fruit flavor. And then there's the browned butter. It gives the cake this lovely nutty flavor which pulls everything together... straight into your mouth.

Incredibly Moist Chocolate Prune Cake

Incredibly Moist Chocolate Prune Cake

oh dear god moist cake

This cake should actually be named "Oh Lord Almighty, this is the moistest cake in the world." The first bite is pure ecstasy. The cake instantly melts into a moist mass of ooey gooey deliciousness the very second it hits your tongue. This is absolutely a religious experience. For a single moment in time, you will achieve true Enlightenment.

I loved watching the facial expressions of my family when they took their first bites of this cake. In every case, there was a pause for reflection. The chewing stops. My mother's eyes widened with Truth. My sister stood stock still for a solid 10 seconds. My father closed (closed!) his eyes in reverence of this great cake. When I claimed this was a religious experience, it was not an exaggeration.

triple threat

I want to write sonnets about this cake. I want to compose a piece of classical music to the dining experience. I want to make love to this cake. As I sit here writing and eating, I can assure you that by the eighth bite I'm still seeing stars.
